Chicken, White Bean, and Spinach Stew

  • INGREDIENTS:
  • 1 tablespoon butter
  • medium coarsely chopped onion
  • garlic cloves, minced
  • 1 tablespoon chopped fresh thyme (or 1 teaspoon dried)
  • (16-ounce) cans cannellini beans or other white beans, rinsed and drained
  • 1/2 cup water
  • canned plum tomatoes, drained
  • (14-ounce) can fat-free, less-sodium chicken broth
  • 3 ounces baby spinach leaves (3 packed cups), coarsely chopped
  • 2 cups shredded skinless, boneless rotisserie chicken breast
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Preparation

  • 1. Heat butter in a medium saucepan over medium-low heat. Add onion; cook 5 minutes or until softened, stirring. Add garlic and thyme; cook 1 minute, stirring. Add beans, water, tomatoes, and broth. Increase heat to high until stew begins to bubble. Reduce heat; let simmer 5 minutes, breaking up tomatoes with a spoon. Add more water, if needed.

  • 2. Add spinach, stirring until wilted. Add chicken; cook 2 minutes. Season with salt and pepper.

So you are all Gluten Free and feeling great and now  now you want to go out for a few drinks or to a party. Which brings up the question. Now what can you drink? Well do not worry, I have searched high and low and I have the info for you. A few things to consider are US labeling laws prohibit beverages that use cereal grains at any point in the manufacturing process from advertising themselves as 'gluten-free.

Unless gluten is added after distillation, all distilled alcohols are free of gluten. But still some people have a problem with anything that is not labeled Gluten Free.

  So, when you do see a 'gluten-free' label on a distilled beverage, it means that no gluten ingredients have been used at any point in the production process.  Always Check Labels and I always follow the saying, “When In Doubt Leave It OUT!” So Personally I will be very careful with spirits that are not labeled “Gluten Free”. This guide is meant to help you but if you are unsure check ingredients and call the manufacturer or do not drink it. Have FUN!!!

10 Easy Gluten Free snacks made with Rice Cakes.





I love rice cakes! They help me get through times when I just want an easy snack.  You can eat them just out of the bag or top them in as many ways imaginable!
You can easily have any of these on hand and prepare a snack in less than 5 minutes.

Top your Rice Cakes With:


1. Nut butters: spread almond butter and banana slices.
2. Yogurt:
3.  Cream cheese
4. Jelly
5. Sour cream
6. Guacamole
7. Salsa
8. Fresh Fruit Slices
9.”Refried” Beans (I actually just smash them up, no oil.)
10. Humus


Be Creative, try sour cream with tomato slices and salt and pepper. Do not be afraid to try new flavor combinations. Anything that is gluten free and sounds good try it!

The 3 Best Things You Can Do To Help Alleviate Symptoms Of Fibromyalgia?

Hey, there my name is Cory Martinez. I am 42
years old. I have 4 awesome kids and an amazing

husband!  I live in a wonderful, beautiful, small town, In Northern California. I am so blessed because of this and countless more ways….I AM blessed, but I suffered from Fibromyalgia for about ten years now.  For those who are unfamiliar with the condition, let me describe what it is like for you.  It is waking up every day, with chronic pain over your entire body.  To make it worse, other symptoms are chronic fatigue, memory problems, Focus problems, and more. What are in my opinion the 3 best things you can do to help alleviate symptoms of Fibromyalgia?

2.      Take your supplements!  The human body needs many vitamins and minerals to have optimum health. I cannot state the absolute importance of having all of  the 90 nutrients the body needs to function correctly. 

3.      Get Off Your Prescription Medications!  
 One of the biggest reasons people die in North America is from prescription side effects! Now I understand that these medications may relieve symptoms, but at what cost? Your life? Do not take my word for it, next time you see a commercial for one of these medications to treat Fibromyalgia or auto-immune disorders, look at the side effects!  Death, Lymphoma as in CANCER!  There is a huge list of very serious side effects!    I suggest having a conversation with your doctor. See how you can safely get off your prescriptions. 

In my experience the only way Doctors and Rheumatologist know how to “help” Fibromyalgia is to prescribe toxic medications! The only thing their advice has done for me is almost kill me and cost me money! 

  What has made the difference for me has been: 1. Giving up trigger foods.  2. Proper Supplementation. and 3. Getting off prescription medication.   Some of my most loved foods are triggers for me, but I would be crazy to prefer to take a pill that could possibly kill me just so I can have the pleasure of eating foods that are bad for me.  I think my family deserves better from me!  I think you deserve better than that too!
