Chicken Meatball Soup And Vegetables



Ingredients
Meatballs
2 pounds ground chicken 1 Tbs granulated garlic
½ tsp pepper 1 tsp salt
1 large egg ½ cup white rice
Soup
5 quarts of water 5 cloves garlic finely chopped
3 stalks of celery chopped 1 large onion chopped
1 cup carrots chopped ½ head of Napa cabbage chopped
8 oz mushrooms quartered 1 jalapeƱo pepper whole
Directions
Add water, onions, garlic, celery, carrots and salt to a large stock pot.  Cover and bring to a rapid boil.  
While you are waiting for the soup to boil, mix your meatballs.  In a large bowl add ground chicken, salt, pepper, granulated garlic, rice, and egg.  Mix thoroughly and set aside.
Once your soup is at a rapid boil, add your meatball. Use a small spoon, scoop up enough meatball mix to form a meatball approximately 1 inch around. Roll into a meatball and drop gently into boiling soup. Repeat until your meatball mix is added into your soup. Cover and cook on high heat for 10 minutes.
After your soup has cooked for 10 minutes add in the zucchini, mushrooms and cabbage.  This is where I taste for salt and add appropriately.  Cover and cook for approximately 15 more minutes then serve.  This recipe serves 8 people.
Use your imagination with this soup; you can substitute the chicken for any ground meat such as ground beef, ground turkey or any other meat as long as it is nitrate free. Also you can add other vegetables to your liking.

Calorie Info, I used My Fitness Pal.com to figure out how many calories in this soup.  All the ingredients together add up to 1555 calories for the entire pot. So if you divide that by 8 you can suppose that per person, assuming you divide up the soup evenly each person would be eating approximately 194 calories.
